Apple Sage Stuffing (Vegan)
(I used Honeycrisp)

Cut bread in rough square inch pieces and spread on a baking sheet. Place in turned off oven overnight and allow to dry out. (If you skip this step, you can lightly toast your bread.)
Mix flax with roughly 4 tablespoons of water and set aside.
Dice onion, celery, and garlic cloves. Saute in pan over medium heat with a little oil or water for 10 to 15 minutes, or until onions are translucent.
Dice apple and add to pan. Saute for about 5 minutes.
Crumble sausage and add to pan. Saute another 5 minutes.
Mix all ingredients in a large bowl. Add more or less veggie broth depending on desired moistness.
Add stuffing to a glass baking dish. Bake at 375 degrees for 30 minutes. If desired, broil for a few minutes at the end to make the top crunchy.
