Chocolate Coconut Pumpkin Oat Bars

Ingredients
  • 3/4cup applesauce
  • 1 1/4 cup pumpkin puree
  • 4tablespoons coconut sugar
  • 1/4teaspoon nutmeg
  • 1/4teaspoon cinnamon
  • 3 1/2cups old fashioned oats
  • 1/4 teaspoon baking powder
  • 1/2cup dairy free chocolate chips
  • 1/4cup coconut flakes
  • 2tablespoons coconut oil(softened)
Instructions
  1. Add 2.5 cups oats to a blender or food processor. Process until turned into flour.
  2. Add the remaining ingredients (including one cup of unblended oats) to a bowl except the coconut flakes and 1/4 cup of the chocolate and stir to combine.
  3. Add mixture to an 8×8 inch baking dish and press down to flatten. Add remaining chocolate to top.
  4. Bake for 15 minutes at 350 degrees.
  5. When finished, smooth chocolate on top and sprinkle with coconut flakes. Press down lightly to make the coconut stick.
  6. Allow to cool slightly before cutting and serving.
