The idea for this recipe came to me when I was thinking of what to do with all of the pumpkin I had stored up. I love making savory things out of normally sweet ingredients like pumpkin. I made these enchiladas for my roommates and we all loved them. The cheese sauce was delicious after the first taste. This was one of those recipes that sounded a little crazy, and then fell together perfectly.
I’ll definitely be making this again. AND I’ll be reusing the cheese sauce too with a few minor changes. I’m thinking a recreation of the chorizo mac n cheese from my Nashville post.
